OK, now we're getting somewhere. If you're staying near or close to sea level then you don't really need the extra HP of the bigger engines. THAT SAID, if you're planning to really slam the boat down with a lot of ballast and carry a lot of people at once, you might consider the bigger engine.
Best is to test drive it with the configuration you will use most of time and answer your own question. At the end, this is personal taste. Whatever the engine is, you will go on plane. The difference is how much time would be needed and the countdown is in milliseconds or seconds. With the H5 on a G21, without full ballast and with a light crew at sea level, the engine is too much powerful if I push the throttle full speed, the boat literally eject the rider and goes on plane. I am still waiting to see a rider capable of handling so much power, they all fall in the first milliseconds doing so .

Our local dealer doesn't have a new G21 with either the H5 or H6 engines. I did demo a 2015 (same hull) and loved the wave. Or better said my son loved the wakeboard wake. That boat had the 409 and it seem adequate. We were full ballast with 5 people on the boat. Our lake is small and the section we ride not very long. I wish I had more power in my 210 so i don't want to make that mistake again. I guess I would never regret getting the bigger engine, except for maybe the day I write the check.

Try 2016 G21 too, they have H5 and H6 engines. Maybe, you have people in your lake or close with G21 H5 or H6 engine and are willing to let you try a set behind. If not, maybe your dealer will get a G21 with H5 engine soon. Ask him what he has pre order from the factory for his showroom. You might even crack a deal with him on a G21 with H5 and options the dealer would like to order for his showroom, test it when deliver, if does not fit, order the one you like with the H6 or take this one. This is a win-win situation for both of you. I would be surprised that your dealer will not accept such a deal. The downside for you is that the dealer wanted option and color might not match your taste. But, unless you take crazy color and option, you should find a match with your dealer.
The H6 is fantastic. I have it in my g23 and have no need for more power. Power wise it is better than my raptor motors have been and feels torquier.
In our trucks I have the 5.3 with 480,000 km on it and never have touched motor and still running great even pulling 7,000 lb loads. Also have the 6.2DI with 110,000k on it and been perfect. The 6.2 in the truck has impressed us so much for fuel efficiency (25-29 mpg) and the power to pull large loads that I was jacked to get into a boat with the same motor. If you plan on keeping the boat for a while, I would spring for the H6.
I have ran the 6.0 for many years and have over 1000 hours trouble free on that motor in our boat. No complaints with that motor either but I do feel the power was a little to be desired. I felt the PCM version had less power and efficiency than the MP Vortec version I ran previously. Still go job done and still sipped fuel but just a bit lacking. The H6 all the way.

The 409 was back as the base engine on the 18 order sheet that I saw.

Are you using the stock prop? I haven't heard of anyone changing the prop, but on my last boat, which was a 22VLX with the 350, I just kept propping down when I wanted to put more people in the boat. ACME makes a 17x15.5 and a 17x14 prop, it would probably run the RPMs up a few hundred(more noise and gas usage) and lose a few mph on the top end, so it might not be worth it.
