Pretty simple one, if I am driving straight and I let my steering wheels go, it will turn left. I think this is the weirdest thing ever, could it be that little plastic trim fin on the back of my rudder? I don't really see how it could be the steering cable if it's only in one direction.

Google rudder tuning. That's what that the tab is for on the newer boats. Older boats you need to grind or file an edge. Sometimes a pull is desirable,depends what and how the boat is used for.

On a ski boat, you typically want some rudder pull. It makes for precise steering in the course possible because the tension keeps all the slack out of the steering system.
