What would a fully loaded, all options checked including 550hp engine, 2016 G23 sell for? How much would a Boatmate triple axel with 18 in rims and powder coat to match boat cost for the G23? I'm asking about what you would expect to pay today in U.S. dollars with end of year discounts? Or give me a range for price for both the boat and trailer that you would consider a good to great deal?
As has been said a couple dozen times on this thread already, most dealers are willing to give you a spreadsheet with MSRP for everything. They then negotiate with you a percentage off of that they are willing to go. MSRP from what you are describing is probably about 170. If you can get 20% off, that is pretty good, which would be 136, and then 10K for a nice trailer. With almost every option and the major engine upgrade, you should be able to get 150's. A few guys here quoted more than 20%, and a few quoted less. I am just guessing on the MSRP. I have the 2016 MSRP sheet, but that probably does not do you so much good, some things changed.
Another way of asking, if you were able to find a used 2016 G23 with 70-99 hours with every option checked including the 550hp and a color matched triple axel Boatmate trailer with 18" wheels, how much would be a good deal to buy. Or how much depreciation would you expect in buying this new vs buying it used? How big of a discount off of a new 2016 would you say is a good deal?

I think that aggressive pricing for the buyer is that a new boat loses 10% the day you take it off the lot and another 10% for each model year old. So if a 2016 boat was originally selling for 150, then 120 would be a good deal. But that is just my warped sense.
I am in the market for a new, demo or promo SN 200 open bow. It seems 20% off MSRP is the minimum I would accept as a discount from the dealer for a new boat, but what is considered reasonable for freight & setup adders? I am in Wisconsin with preliminary line items for these at $2k and another $2.5k for rigging/setup respectively - seems a bit high.

Shipping is a hard cost to the dealer. I am not sure about set up, but I suspect that's a softer cost.
Overall, on a 16 left over, I'd say the market price ought to be pretty close to a demo/promo boat because its a year-old used boat the second it rolls off the lot.
Hello, in response to your post, I just bought a 2016 G25 with every possible option except the XS7 (mine has the XR7) and I got a 39% discount from list price. There are deals to be had on 2016 boats.
Non-currents are the way to go, unless there's some new feature you have to have. Just bought mine for 55% off MSRP, which is obviously below dealer cost, but the manufacturer tossed in a big chunk of money as a part of a special promotion they have going on. Promo boat deals can be decent, however you only get the remainder of the warranty, and it'll have roughly 100 hours on it.
I think the problem is most of us want the G23. My dealer is offering great discounts on 2016 G21's, G25's and 230's. He is not offering near the deals on G23's. They are the in demand boat so can't really blame him for that. Much as I would rather have a G23 looks like I will end up with a 2017 Malibu LSV. It's a 40,000 dollar price swing and a year newer boat.
