As someone that repairs boats for a living I'll tell you we would consider that a repairable boat.... Hard to see all from the images but we've done much worse. When done correctly you wouldn't know it had been done. We've had Cobalts come in with totally missing keels!
A concern I hear alot is with regards to wiring gremlins and motor trouble from sinking/water ingress... Which I really don't get as these are things we'd replace. So you should actually walk away from this with a better condition boat than when it happened.
In the UK, where I am based insurers don't particularly like 'betterment' when a boat is repaired better than before. So for example if your boat is 10 years old, they want to see a warrantied rebuilt engine go in, rather than new. But on a boat like yours there's not really used parts that can go in so I'd be thinking along the lines of new dash loom, new engine loom, new ECU, new motor, new underwater gear, new gearbox and GRP repairs. Then anything minor that got wet be replaced.
